What could be better than Cheesy Meatballs?   Cheesy Meatball Bombs! These yummy bites of dough are filled with mozzarella cheese and an Italian meatball.  They are seasoned with melted butter and Italian breadcrumbs.  Top it off with Parmesan cheese and a dip into a bowl of marinara sauce.   DELICIOUS!  Did I mention that this recipe is so easy to make, too?

Cheesy Meatball Bombs are Easy to Make

When the kids come home from school, they are always hungry, but instead of giving them a snack, we often just have an early dinner.   Having a meal planned makes this happen a whole lot easier.  Even better is when the meal that you planned is easy!

These Meatball Bombs are easy to make!   If you need a quick weeknight meal, the last thing that you want to do is have to plan a meal at the last minute and not have anything ready for it.  We meal plan for this reason.  Emeals sends you the weekly menu plan for whichever food plan you choose.  You can switch at any time to another plan.

I was on the kid-friendly meal plan, and then went to the 30-minute meal plan, but after watching a show called Forks Over Knives (on Netflix), I switched to the Vegan meal plan.   However… I am always an 80/20 girl when it comes to meals: 80%  of the time we eat clean, whole-foods, 20% of the time we let go a little & have what we want, like pizza, burgers or cheesy meatball bombs!

Do I Make Homemade Meatballs?

Up until a year ago, I only made homemade meatballs. When I make meatballs from my own meatball recipe, I will often double the recipe and freeze half of them.  Then, one day my friend told me to just try the frozen meatballs from the store.

While they don’t quite compare to homemade meatballs, they are good and they are an amazing staple to keep on hand for a recipe.   I’ve also bought pizza dough from the bakery section of our grocery store for recipes like this, however, today we will be using biscuit dough (so easy).  I keep biscuits on hand for recipes like this one and for mini taco pizzas made with dough & ground beef.

Directions for Cheesy Meatballs in Dough

These cheesy Italian meatball bombs are quick to make.  Start by preheating the oven to 375 degrees.   Separate each biscuit into 2 halves.  Flatten each half into 5-inch circles.

Once you have your biscuits flattened, sprinkle about 1 1/2 Tablespoons of mozzarella cheese into the center of each flattened biscuit.   Place the meatball in the center of each dough circle.  The cheese melts right onto the meatball making these cheesy meatballs taste amazing.

Melt your butter in a small bowl.  In another bowl, mix bread crumbs and parmesan cheese.   Dip the biscuits into the melted butter.  Next, roll the biscuit in the breadcrumb mixture to coat.

TIP: I’ve also used garlic butter (so good!).  I just added a little garlic powder to the melted butter. 
Also, one time I didn’t have butter, so I used Olive Oil.  It wasn’t as good, but it still turned out well. 🙂

Place the biscuit on a greased baking dish and bake for 16-18 minutes, until it is golden brown.

Tip: I bake it with the seam side down to be sure it doesn’t open while I’m baking it.

Serve with a marinara sauce for dipping.   I love my great grandma’s marinara sauce recipe.

Cheesy Meatball Bombs

These cheesy meatball bombs are quick to make and they are delicious.  They make the perfect weeknight meal! 

Ingredients 

  • 2 17.3 oz cans refrigerated flaky layer biscuits
  • 4 cups shredded mozzarella cheese
  • 1 12 oz package of Italian-style frozen meatballs, Thawed
  • 1/4 cup butter melted
  • 2 cups Italian breadcrumbs
  • 1/4 cup shredded parmesan cheese
  • 1 24 oz. jar pasta sauce, heated.

Instructions 

  • Start by preheating the oven to 375 degrees.   
  • Separate each biscuit into 2 halves. 
  • Flatten each half into 5-inch circles.
