Do you want to know my very favorite Meatless meal ever? This is it. I could cook it every night, but Mickey & the kids would get tired of it WAY before I would. ♥
This recipe for rice, black bean, pepper casserole is great! It can be used with chicken for a full meal. Today I’ve partnered with Minute Rice to share this with you.

This is a great meal to make if you need a quick go-to type of meal. It is filling and everyone loves it. Even our kids love this (and they usually don’t like beans).
Ingredients:
- 2-3 cans black beans
- Bag/Box of Brown rice (or you can pick up two small cartons of the Minute® Ready to Serve Brown Rice )
- A bag of Saffron Rice
- 3 peppers (I get the multi-colored pack at Aldi)
- Cheese (I forgot that one in the picture!)
- 1 chopped onion
Instructions:
First- Cook the rice (according to the package)
Second- Take your peppers & wash them:
OPTIONAL- onions & more peppers:
Fifth- Saute’ them until they are soft.
Sixth- Combine everything in a pan ↓
Cooked peppers, onions, rice, and the rinsed/drained black beans.
Seventh- Sprinkle cheese on top (I use Sargento Shredded Reduced Fat, four Cheese Mexican, because it is a little less fat than other cheeses) – be sure to use enough cheese to really cover it.
Eighth- Bake it at 350 for about 15-20 minutes, until the cheese is melted:
Ninth– Top it with sour cream…
Tenth (last step)- You can sprinkle a little more cheese on top…

This looks so good but the Saffron rice has monosodium glutamate in it and I am allergic to it. Suggestions for an alternative?

I’ve made it with Spanish rice, as well as with brown rice. Both were good. 🙂
