A few weeks ago, I was talking to my friend Julia on the phone. She was telling me about this HUGE transformation that she saw in her daughter when she switched her foods from dairy-everything to dairy-free. I decided to try it, too. It’s funny because I had been talking about it with Mickey for a while and found that there are a lot of reasons that people go dairy-free, like weight loss, clearing up skin, GI issues, healthy digestion and more.
I looked around online and found the Delicious Dairy Free 21 Day Dairy Free Challenge by So Delicious. I partnered with them for this post because I was inspired by their challenge. When you sign up, you get a new coupon each week, a swap list, tips, a shopping list, snack guide & more. What I loved about this particular challenge was that it kind of walks you through it, which most of us need when we stare starting something new. All over the world, people are taking the pledge to go dairy free and they are doing it together.
I wanted to keep things as normal as possible, so I started by buying just a few key things that we eat every single day: ice cream (yes, really) and yogurt.
The ice cream, by the way, is Salted Caramel Cluster & it is heavenly! It’s made with cashew milk & has these big swirls of caramel:
I’m going to be honest here that this is one of our favorite “ice creams” and we would have NO Idea that it was dairy free!
I also got the coconut-milk (unsweeted vanilla) yogurt:
But I went a step further and made my favorite dairy-free yogurt & fruit parfait:
I picked healthy options and turned it into more of a lunch than a snack! I hope that you love this as much as we did!
- Start out with So Delicous Coconut Milk unsweet Vanilla.
- Take your yogurt and place it into the bottom of a glass. I like to use a mason jar because I can take it with me or send it with my husband to work (great tip from my friend, Hillary).
- I put the yogurt down and put frozen fruit right on top of it:
The next step is to put more of the yogurt on top or to use a second container. I used a second container because my husband was planning on taking this for his lunch. I then topped his off with sliced bananas.
It is really good and every bite has fruit and yogurt.
You could even top it off with some fresh blueberries or a handful of your favorite granola.
