Summer in Iowa means we eat ALL the ice cream we can! Ok, who am I kidding – we eat ice cream year round here too but it’s just so much more amazing in the hot summer weather!

Plus, the strawberries are ripening and we can visit farms to pick them ourselves (or if you have an awesome Mother-in-law, she just drops them at your house!) Last week I have three flats of strawberries dropped off and I had to figure out ways to use them all before they would rot. We made everything from this Ice Cream topping to Strawberry Summer Salad!
How to Make Strawberry Ice Cream Topping
Ingredients You Need
- 5 Cups Strawberries, Diced
- 3/4 Cup Sugar
- 1/2 Cup Water
- 1 tsp. Lemon Juice
Combine the strawberries, sugar, water and lemon juice in a large pot over medium heat for 15 minutes. You’ll need to stir this occasionally to ensure that it doesn’t scorch the bottom of the pot. The mixture will thicken into sauce type consistency as it heats and simmers. My first batch needed to cook for 20 minutes and this recipe for 15 minutes, depending on your stove you may need to adjust the time.
Is strawberry picking a common activity in your area? We loved to take the boys out to a pick it yourself farm and just go crazy picking berries when we lived in Minnesota! There’s just something about fresh strawberries that screams summer to me so we take advantage and eat them as much as we can!
My youngest guy made a batch of this strawberry ice cream topping himself, it’s so easy to make and other than just supervising him cutting and using the stove – he was able to do everything himself! I love that!
