It’s summertime and that means ICE CREAM and this Strawberry Ice Cream Topping is the perfect addition to a delicious bowl of vanilla ice cream! Pair it with this southern strawberry lemonade and you’re set!
Summer means we eat ALL the ice cream we can! Ok, who am I kidding – we eat ice cream year-round here, too, but it’s just so much more amazing in the hot summer weather!
Plus, the strawberries are ripening and we can visit local farms to pick them ourselves. Last week I picked up two 5-gallon-crates of strawberries from our local farm and I had to figure out ways to use them all before they would rot. We made everything from this Ice Cream topping to Strawberry Lemonade!
How to Make Strawberry Ice Cream Topping
INGREDIENTS YOU NEED:
- 5 Cups Strawberries, Diced
- 3/4 Cup Sugar
- 1/2 Cup Water
- 1 tsp. Lemon Juice
HOW TO MAKE IT:
Combine the strawberries, sugar, water and lemon juice in a large pot over medium heat for 15 minutes. You’ll need to stir this occasionally to ensure that it doesn’t scorch the bottom of the pot.
The mixture will thicken into sauce type consistency as it heats and simmers. My first batch needed to cook for 20 minutes and this recipe for 15 minutes, depending on your stove you may need to adjust the time.
Our kids have made this strawberry ice cream topping by themselves, it’s so easy to make and other than just supervising them cutting and using the stove – they were each able to do everything themselves! Of course… we all ate it!
You’re going to want this for a daily snack with your ice cream. Enjoy!
