Yesterday, we had two lacrosse games, a baseball game, a birthday party, and I had errands to run. Dinner ended up being my Taco Casserole Cups because they are simple, nutritious, and the kids love them. Borden® Cheese believes in weeknight dinners to bring the family together around the table to talk, laugh, and enjoy a wholesome, convenient, and I do, too!

Our family could eat tacos every single night, so this is an easy, go-to meal for us, made with only five ingredients!

For me, the hardest part about dinner is planning it, but with a few staples that we keep in our fridge like
Borden® Cheese, dinner is quick and easy to make on those busy weeknights! We always keep their shredded cheese and slices in the fridge because I know they are nutritious; each serving provides an excellent source of calcium and protein. As my son always reminds me, “Cheese makes everything taste better.” haha!  

MEAL PLANNING TIP: My best tip for planning your meals is to make a list of 30 recipes that your family likes.  Write them down, from  #1 to #30. Every month, use that list, swapping in new favorites when you find them.

It makes mealtime much easier!

This recipe is quick, easy, and it uses only a few ingredients from foods that you have at home or can get at your local grocery store.  Plus, this is a great recipe that even the kids will love.

Ingredients needed to make Taco Casserole Cups

  • 1 lb. ground beef
  • 2 Tbsp taco seasoning
  • 48 Wonton wrappers
  • 1 cup Borden 4 Cheese Mexican Shredded Cheese
  • 1 Can of refried beans

*Optional Garnish: salsa, sour cream, green onion

Taco Casserole Cup Directions

  1. Preheat oven to 400 degrees.
  2. Warm a large pan over medium-high heat.
  3. Add ground beef to the pan and cook until no longer pink. Add taco seasoning and 1⁄2 cup of water.
  4. Cook the taco meat mixture for 3-5 minutes or until thoroughly cooked. Set aside to cool slightly.
  5. Coat a 12-cup muffin pan with cooking spray. Place one wonton wrapper into the bottom of each muffin cup.

  6. Place 1 spoonful of refried beans into each cup and sprinkle with approximately 1 teaspoon of shredded Borden cheese.
  1. Place the second wonton wrapper layer on top of the beans and cheese. 
  2. Take the pan with slightly cooled taco meat and stir in 1⁄2 cup of shredded cheese. 
  3. Spoon 1 mounded Tablespoon of taco meat mixture into each cup.

  4. Bake for 10-13 minutes or until edges are browned and the cheese is melted.
  5. Garnish each Taco Casserole Cup with your favorite toppings: salsa, a dollop of sour cream, and a sprinkle of green onions.
