Oh, yes… we have been able to add cheese & butter to our favorite vegetable! I’ve been making this casserole for as long as I’ve been cooking, and it just gets better with time. It’s so easy, delicious and our kids LOVE it! I’d call that a win-win-win!

I usually serve this on a busy night with grilled chicken. It is so quick. When I know that the kids have sports practice or homework that needs to be done, I’ll prepare it ahead of time and put it in the oven while we are working on schoolwork, so it is ready when we are. It is a really great back to school meal that the kids, Mickey & I all love.
3 pkg. (10 oz. each) frozen chopped broccoli, thawed, drained
3/4 lb. (12 oz.) Land O Lakes® Deli American
30 Crackers, coarsely crushed (about 1-1/2 cups), divided
1/4 cup (1/2 stick) Land O Lakes® Unsalted Butter, melted
- Heat oven to 350°F.
- In a large bowl: Mix broccoli, Deli American and half the cracker crumbs until well blended.
- Dump this mixture into a 2-qt. baking dish.
- In a separate bowl, mix remaining cracker crumbs with the melted butter.
- Pour over entire broccoli mixture.
- Bake at 350 degrees for 30 minutes, covered with foil.
- Remove foil and bake 30 more minutes or until heated through.
This recipe is so yummy! Your family will be asking for it every few days… and just watch out, because your kids will ask for it, too! You might want to give it a name other than Broccoli Casserole. 😉 In our house, we call it “Cheesy Trees” and it works!
Ps- If we have leftovers, I will dice up the chicken and add it to the casserole and freeze it. I then give it to the kids after school. They think it is a “snack” but it is really a super healthy boost of veggies for their day!
