This skinny thin mint shake is a favorite of mine!  I am always looking for high-protein breakfast ideas for our kids, because they are not usually big breakfast eaters in the morning. They would rather drink something in the morning than have to eat (until a few hours after they are up, anyway).

This skinny mint shake is perfect, because it has a secret ingredient built in (shh… no children ever have to know about spinach in their mint shakes!) 

RECIPE:

3/4 cup Silk yogurt

1/4 cup fresh mint, tightly packed

1 cup Silk Soymilk  (Great for the protein that they need to start the day!) 

3/4 cup baby spinach

3/4 tablespoon maple syrup

1/4 cup dark chocolate chips or dairy-free chocolate chips

1/2 packet stevia (optional – for added sweetness)

2 cups ice

Grab all of your tools and ingredients and have them ready to go.

A cutting board with a spatula, whisk and measuring spoons and a container of Silk Milk.

Combine everything into a blender… blend and enjoy!  Use your spatula to scrape down the sides if all of the mint isn’t being incorporated.

PS- I give the kids a fun striped straw for ONLY THIS smoothie.  I get the green and white ones and we call them our “Mint Straws” – they love it.

I serve them in mason jars (I actually have a blender that blends each serving in a mason jar and then you just pop the mason jar off and serve it as is.) I let the kids sprinkle a few more chocolate chips on top –  I let them chop up about 2 or 3 with their kid-knife (it is like a mini butter knife with kid-characters on it).  They chop them on our cutting board and then they just sprinkle them on top.   This is their favorite  part.
