Dr Seuss’ birthday is coming up.. and that means that children everywhere will be reading Dr Seuss books! When I was a teacher, I loved to bring in fun treats or crafts for my students. ¬† I also wanted to bring in things that all of my students could have. ¬†One year, I had a child that was gluten-free, ¬†so finding gluten free treats was always on my mind.

When is Dr Seuss Birthday?

Theodor Seuss Geisel was born on March 2nd, 1904 in Springfield, Massachusetts in the United States.  He went by his pen name by which he authored children’s books: Dr. Seuss.   In 1998, the National Education Association started Read Across America, as a day to celebrate reading all over the United States.  They decided to hold it on the same day as Dr. Seuss’ birthday.

How to make Green Eggs and Ham: Green Eggs & Ham Recipe

  • To make green eggs, simply (and carefully) ¬†separate the egg white from the yolk. Without breaking the yolk, put it into a bowl for later. ¬†In the meantime, add green food coloring to the egg white. ¬†Mix until it is green. ¬†Carefully add the yolk into the bowl of egg whites. ¬†Fry in a buttered skillet.
  • To make green ham,¬†soak ham slices ¬†in water with green food coloring. ¬†Let it soak overnight, in the refrigerator. ¬† Before cooking, place the ham slice on a paper towel to remove excess liquid. ¬† Cook as you would normally cook the ham (I suggest cooking it in a buttered skillet).

We’ve all read the Green Eggs and Ham book, written by Dr. Seuss. ¬†It’s a classic and for good reason- our kids love it!¬†¬†Dr Suess’ Green Eggs and Ham is read in classroom’s all over the world, even the Dr Seuss Green Eggs and Ham video is watched often during Read Across America week. ¬†To celebrate Dr Seuss’ birthday, I wanted to be sure to share these Green Eggs & Ham Cookies¬†ready to eat (and share!). ¬†¬†They are perfect for a Dr Seuss Birthday Party, too!

When I was younger, my mom would make Green Eggs & Ham for my brother every year. ¬† It was just a simple recipe of eggs & ham, but the eggs had green food coloring in them. ¬†I don’t remember trying them, but I was definitely a picky eater when I was younger (I still am for some things). ¬† So, instead of green eggs & ham… we’re making gluten-free cookies!

Green eggs & ham cookies

Dr Seuss Green Eggs & Ham meringue cookies:  

Makes 25 cookies

  • 4 egg whites
  • 1/2 tsp cream of tarter
  • 1/2 C sugar
  • 3/4 C powder sugar
  • 1 tsp vanilla
  • leaf green food coloring¬†
  • 2 disposable piping bags¬†
  • cookie sheet fitted with parchment paper

Directions

  • Preheat oven to 225 degrees
  • In a standing mixer, combine the egg whites and cream of tarter
  • Mix until soft peaks start to form
  • Continue to mix while alternating between the two sugars, add 1 TBSP at a time, ending with powder sugar
  • Continue to mix until stiff peaks form
  • Scoop 1/2 cup of the meringue into a bowl and add a few drops of green food coloring and mix until combined
  • Scoop into one piping bag
  • Scoop the rest of the meringue into the second piping bag.
  • Cut the tip off the piping bag and pipe out an egg shape onto the cookie sheet.
  • Depending on how big you pipe the eggs, you can about 6-12 onto a cookie sheetGreen eggs & ham cookies
  • Cut the tip off the green piping bag and pipe a small dot onto the white meringue.

  • Bake in the oven for 1 hour minutes

Let cool for a few minutes before enjoying!
