While our kids love pancakes, it’s no secret that we love them, too. While I’m a fan of chocolate chip pancakes, or gingerbread pumpkin pancakes (oh- and even sweet potato pancakes!), Mickey likes them with blueberries… which I’ve come to really like, too. I hope you love making & eating them as much as we do!

This pancake recipe is so good- and has a few ingredients you might not see in other recipes, but it makes them even better. I add Dr. Josh’s Axe’s Multi Collagen Protein to the pancakes, because you can’t see or taste it, but you get all of the benefits. Supplementing with collagen is vital for supporting healthy tissues, the gut, muscles, mental health and healthy, glowing skin. It’s very easy to use & since you can’t taste it (at all!), we can add it to anything.

If you’ve never supplemented with Multi Collagen, here are a few benefits:

So… here is my favorite pancake recipe.

INGREDIENTS:

2 cups flour

3 Tbsp sugar

1 ¼ tsp baking powder

½ tsp baking soda

½ tsp salt

6 Tbsp butter (unsalted)

1-2 heaping tablespoons of Dr. Axe Multi Collagen Protein (tasteless)

2 eggs

1 ¾ cup whole milk

4 Tbsp white vinegar (yes, really- it makes them fluffy & you can’t taste it, either)

2 tsp vanilla extract

Optional: blueberries, walnuts, chocolate chips… whatever you like to add in.

DIRECTIONS:

Combine milk and vinegar in bowl and set aside to sour for approx. 5 minutes.

In the meantime, combine flour, sugar, Dr. Axe Multi Collagen Protein, baking powder, baking soda, and salt in large mixing bowl.

Go back to your first bowl and whisk in eggs to your now soured milk and melted butter.

Slowly pour your dry ingredients into your wet ingredients and whisk together. Stir until just combined, don’t over stir.

You should see some lumps.

Heat large skillet or griddle over medium high heat and spray with cooking spray.

Cook until edges set and bubbles appear on surface. Flip pancake, and continue to cook until other side is golden brown.

Sprinkle a little bit of your add-in on top, too. (blueberries for Mickey, chocolate chips for me)

These pancakes freeze well, so make a big batch at one time. To freeze, cool pancakes completely and then simply wrap each pancake in a plastic wrap and then store in freezer bag. I double bag them just to ensure they stay free of frost.

You can even try adding a few sprinkles, like I’ve shown you before (the kids love these)

Try using the Multi Collagen in other foods, too. I put it in oatmeal, cottage cheese, smoothies, soup, yogurt, a cup of juice or even coffee. (they have on-the-go packs that I grab when I’m busy or heading out, too.)

  1. Becky, these pancakes look wonderful. I follow the THM eating plan and have been learning about the health benefits of collagen!
    BTW…. I have the same mug- I love it! My grandgirl, Sara, bought it for me 🙂
