Over the next few months, I’ll be sharing my favorite recipes with you, featuring these brands. I want to show the world that you don’t have to cut out bread to live a healthy life, and you certainly don’t have to stick to just sandwiches when it comes to bread! Our family goes through a loaf of bread in a day or two (6 people!) and we love to mix it up with muffins, tortillas and more! It’s all about balance and finding what everyone likes. We find fun ways to mix things up in our house.
Today, for Cinco De Mayo, I am sharing three of my favorite recipes.
1- Chicken Chipotle Tortillas.
1 dried chipotle pepper (remove the seeds)
1/4 cup fresh parsley
1/4 cup fresh cilantro
2 cloves garlic, peeled
1 colored pepper, cut and chopped
salt & pepper to taste
4 boneless, skinless chicken breasts, about 4 to 6 ounces each
1/4 cup shredded cheese
Mayonnaise to spread on tortillas
Mix in a bowl (add olive oil if you need it).
Spread Mayo on Casa Mendosa Tortilla
Add chicken mixture & wrap.
2. Lime Chicken Taco Ingredients
- 1 whole rotisserie chicken (No cooking needed. Your welcome.)
- 1 cup salsa verde
- 1 cup pico or red salsa
- 1/3 cup agave nectar
- 1/4 cup fresh lime juice
- 1/2 cup reduced fat sour cream
- Casa Mendosa Tortillas
- fresh diced avocados, radishes, bell peppers, onions and cilantro
- shredded cheese
- Mix, wrap & enjoy!
3. Avocado Black Bean Wrap
This recipe is SO simple!
- 1-2 cans black beans (rinse & drain)… we use one can if it is just for the two of us.
- 1 lime
- 3-4 wraps
- 1-2 Avocados: peeled, pitted and semi-mashed.
