We’re kind of on a banana kick lately! We’ve made Four Ingredient Banana Ice Cream  and Banana Pudding Snacks over the last couple weeks and today we have a delicious Banana Split Quesadilla!

Can you tell my boys love anything and everything Banana? I mean, there’s not a day that goes by that we’re not having something with bananas in it!

This is actually a recipe that I made for breakfast one morning and it ended up turning into a dessert not long after. We’ve added toppings like whip cream and ice cream to the banana split quesadilla and it’s a pretty darn good dessert!

But, if you’re making it for breakfast, you may want to keep those parts off. Load it up with extra fruit and peanut butter instead! I’d sprinkle a little cinnamon on top too or even add more strawberries on top! Yum!

How to make a Banana Split Quesadilla

Ingredients You Need for each quesadilla

  • 2 10 inch Tortilla Shells
  • 3 Tablespoons Peanut Butter
  • 1 Banana
  • 1/2 Cup Strawberries, sliced
  • Chocolate Chips, I just sprinkle a few on top.

Start by spraying your pan with nonstick cooking spray. Turn on your oven to broil. Place one tortilla on the pan and spread the peanut butter over it. Layer the bananas, strawberries and sprinkle the chocolate chips on top. Top with the second tortilla shell. Broil for a few minutes until the chocolate chips melt and the top is crispy. Top with cool whip or ice cream. Enjoy!

This is a great breakfast recipe to make when your kids are looking for a change from the normal cereal or eggs! Plus, it makes a delicious dessert!

It’s also a recipe that my kids can make themselves because it’s so easy and requires little work. They love making their own meals so this is a great option for them!
