When you crack the eggs, separate them (yolks in one bowl, egg whites in the other)
Add the sugar to the egg whites and whisk with your whisking attachment (or whip by hand)
Next, add the butter (MELTED!)
Mix well.
Add the almond extract and mix
Add the vanilla extract and mix
Add the water and mix.
Last, add the flour
Mix Well.
Heat your non-stick griddle or frying pan on low to medium heat and let it warm up.
Drop about two tablespoons of the batter onto the pan and spread it QUICKLY so it makes a flat pancake that is close to 3 inches across.
Cook them for about one minute.
Flip with your spatula to do the other side for a minute. (they need to be golden on both sides).
Flip it using the spatula and cook for about one minute on the other side.
Note: You have to cook them long enough to get golden on the edge to have them crispy like in the restaurants.
When it is done, remove it and let it cool just enough to touch.
While it is still warm, take one of your cookies and place one of the fortunes in the center of the cookie and fold it over in half with the fortune inside.
Bend in half again to make them look like "fortune cookies".
