This low calorie, whole foods recipe for our salsa pico de gallo recipe is SO DELICIOUS!

As most of you know, we have four sweet kiddos!  As hard as we try, we still have some picky eating moments in our house.  Our kids love pico de gallo when we get it while we are out to eat.  We loved that they loved it- full of veggies!

My husband decided to go ahead and make this at home and let me tell you… IT IS WONDERFUL!  It surpasses any restaurant and it is amazing!  He makes a HUGE pot of it (he uses the biggest cooking pot that we have) and it is gone in about 3 days.  I kid you not!

This could easily be an expensive snack, if we let it, but we don’t.  We buy all of our vegetables at Aldi and we also buy their blue chips (organic and gluten free) for dipping.   (My husband compared prices one day and Aldi had their strawberries for 99 cents, while Harris Teeter had the same size container for $3.50.  We were sold!)

Ingredients:  (You can make LESS of this, but we love it and this is just enough for us… until next week!)

salsa pico de gallo recipe

14 Roma Tomatoes (remove the seeds to keep it from becoming too watery)
2 green peppers (large)
2 bell peppers (orange, red… whatever you want)
1 red onion
1 large Vidalia onion
2 jalapenos (remove the seeds!)
1 large cucumber (remove the seeds)
3 cloves of fresh garlic (minced)
2 limes- just squeeze the juice over the top
a bunch (group) of cilantro – (they come in “bunches”, use about 1/3 of this- only the leaves, cut up)
Salt- a little less than a Tablespoon  (start with 1/2 T and work your way up, to taste)
Pepper- about 1/2 T to a full Tablespoon (to taste)
Cumin- sprinkle a little on top

HOW TO PREPARE IT:
Remove the seeds from ALL vegetables.
Dice the vegetables as small as you can or want.
Add everything (vegetables) to a large bowl or pot
Squeeze lime juice on top
Add garlic, cilantro and seasonings.

Mix and let sit for one hour.

Store in air-tight container in the refrigerator.

We normally re-use our containers that we get from Chinese take-out.  This fills up three of those, on average.
