Our kids LOVE to have pancakes and since learning how easy it is to make pancakes from scratch – we make them twice a week!   This pancake recipe with vinegar is going to be your go-to recipe.

Our kids usually ask for pancakes on the weekends, but since this vinegar pancake recipe is so easy to make, we often make these fluffy pancakes at least once during the school week, too   We change it up a little bit with different mix-ins, but we keep the general recipe the same. 🥞😋

This recipe has a secret ingredient— vinegar, which you wouldn’t normally see in pancakes, but it is SO good! You can’t taste the vinegar, but it makes them fluffy and light without sacrificing taste.

INGREDIENTS:

  • 2 cups flour
  • 3 Tbsp sugar
  • 1 ¼ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 6 Tbsp Land O’Lakes® Unsalted Butter, melted
  • 2 eggs
  • 1 ¾ cup whole milk (optional: use dairy-free milk, almond milk, or homemade buttermilk)
  • 4 Tbsp white vinegar
  • 2 tsp vanilla extract

Optional Pancake Add-Ins:

  • Blueberries
  • Sprinkles (on birthdays or holidays)
  • Chocolate chips
  • Fruit
  • Nuts

DIRECTIONS:

Mix part of the wet ingredients: Combine the milk and vinegar in a bowl, then set aside to sour for approx. 5 minutes.

Combine the dry ingredients: combine flour, sugar, baking powder, baking soda, and salt in large mixing bowl.

Whisk in eggs, soured milk and melted butter.  Stir until just combined,  don’t over stir.

You should see some lumps.

Heat a large skillet, frying pan, or griddle over medium-high heat and spray with cooking spray.

If you have more than one mix-in, separate batter equally into 3 bowls and then stir in your add-in ingredients.

Cook until bubbles appear on the surface and the edges are set.  Flip pancake, and continue to cook until other side is golden brown.

Let your kids pick their favorite things to mix in, too. Finally, top with more of your favorite mix-ins, a pat of butter, or maple syrup.  Enjoy!

These pancakes freeze well, so make a big batch at one time.  🥞

TO FREEZE: Cool pancakes completely and then simply wrap each pancake in a plastic wrap and then store in freezer bag.  I double bag them just to ensure they stay free of frost.

Trust me, your family will ask for these pancakes often.  We use this easy recipe for pancakes because they are great every time.

TIP: We’ve even doubled the recipe so we can have them two days in a row. They store well, they are delicious, and they are fun to make with the kids. It’s like eating cake for breakfast!

  1. Do you not taste the vinegar in the pancakes? Also if you freeze them do you microwave them? Or put them in a toaster? Which one keeps the fluff in them? Microwave? Or toaster?

I have not made this recipe yet but if you ever get that Nestle Sundae ice cream it is sort of rectangular shaped an a short squatty plastic container …they are excellent for storing pancakes in the freezer and there is no frost or using your good plastic storage. The ice cream is usually under $4. Use wax paper between each pancake then if you only want one at a time you can just pop in the microwave frozen 15-20 seconds per pancake but check to make sure they are not too hot before eating.
