Healthy Strawberry Cheesecake Recipe

Here is a refreshing, delicious recipe for strawberry cheesecake! It is great for a spring or summer dessert . This recipe was given to me from my Mother-in-law’s friend, Rose, at my bridal shower.  Enjoy!

Ingredients:
1 package (8 oz) low-fat cream cheese
1/3 cup sugar
2 cups fat free thawed cool whip
Fresh Strawberries
1 honey maid pie crust (or make your own graham cracker crust using fat free graham crackers!)

Directions:
Beat cream cheese and sugar with the mixer
Gently stir in cool whip
Spoon onto crust
Refrigerate for three hours

Top with whole and sliced strawberries (the more, the merrier!).

TIP: If you want strawberry syrup, just combine 1 cup of water and 1 cup of sugar in a saucepan over medium-high heat; stir until sugar is dissolved. Mix 2 cups of cut-up (quartered) strawberries into the saucepan and bring to a boil; boil for 10 minutes. Reduce heat to medium-low and simmer.  When the strawberries are soft & the syrup is thick, it is ready.  Transfer it to a container and refrigerate.
