This recipe for Weight Watcher’s Healthy Spinach Tortellini Soup is the best! This healthy weight-loss soup is quick, easy, and requires just a few ingredients.  It’s SO GOOD!

This recipe for Healthy spinach tortellini soup is adapted from Weight Watchers.

The tortellini is optional… it is more filling when included in the recipe, but my daughter and I prefer it without the tortellini. We just like to include the spinach & tomatoes.

Either way- it is good! This is a very QUICK, EASY soup. It takes about five minutes to make, and then we eat it for lunch for the next few days.  (or even for a quick snack)

Ingredients:

  • 4-6 c. chicken broth (or vegetable broth)
  • 1 (14-oz.) can of diced tomatoes
  • (OPTIONAL) 1 (9-oz.) package of fresh tortellini (The soup is still great without the tortellini)
  • One bunch of fresh spinach chopped or a box or bag (I will normally use a bag of fresh spinach)
  • some salt and pepper to taste
  • shredded parmesan cheese

Directions:

  • Start out by heating chicken broth.
  • Add tomatoes
  • Turn up the heat to high and bring to a boil
  • Add the tortellini and cook according to the package instructions
  • When the tortellini is almost done, add the chopped spinach. (I will throw in a full bag of fresh spinach – open & toss in)
  • Taste and add the salt and pepper to your taste.
  • Serve with a sprinkle of parmesan cheese.
A bowl of tortellini soup with a loaf of bread beside it.

If you omit the tortellini, just heat the soup to a boil. Turn the heat off, put some in a bowl & Sprinkle with cheese (this makes the soup taste fantastic- it just melts in there!)

If I make some for our kids, I will let them put the cheese on themselves.  It’s our daughter’s favorite meal. She asks for it at least once a week. She’ll even ask for it for breakfast (she likes it without the tortellini).

  1. Thank you for this recipe! I am always on the lookout for quick and easy, but tasty meal ideas! Is there a print version available for the French Dip Sandwich recipe also? I couldn’t see one when I clicked on the link and went to that recipe’s page.

Wow, that ooks super easy! I’m always looking for great soup recipes here. It gets so cold where I live in Canada – soup is a winter-time must.

I ate this many times during my childhood, the only thing different is my mom never used parmesan cheese. We’ll have to try out the next time we make this soup.
