I wanted to share this recipe for Chicken Fettuccine Alfredo with Broccoli and Sun-dried Tomatoes with you because it was so fast and easy (and I have four kids, so this is a must in our house!)  This is the sort of meal that looks very impressive, but it only takes a short amount of time to make and the whole family loves it!

So start off by buying Michelina’s Fettuccine Alfredo in the freezer section.  I like Michelina’s because it is made from fresh ingredients, and comes at a low price.   You could really buy any of these, but I like the alfredo the best. Ok- so the ingredients: 
Michelina’s Fettuccine Alfredo
Sundried tomatoes
Brocolli (Steam In a Bag)
Chicken breasts
Fresh Parmasian cheese

What to do: 
Grill the chicken (boneless, skinless chicken breasts)
Slice it
Cook the Michelina’s Fettuccine Alfredo.
Next, cook the brocolli

A bowl of broccoli .

Add the broccoli and tomatoes.  Mix this up and place the sliced chicken on top.  Grate some fresh cheese on top.

This is such a quick, easy meal.  It really takes about 30 minutes because I just cook the chicken while I am cooking everything else.  (You could even save yourself more time and get the pre-cooked chicken).

It is delicious and even the kids ate it, so you know how well that goes over in our house!

  1. This is a great recipe for my daughter, minus the chicken. She is a vegetarian so will often make her own meal when we are having an entree that is primarily meat. She likes pasta and can easily add her favorite vegetables to add nutrition and bulk up the meal. Great idea! Thanks for sharing it.
