Today I wanted to share & tip for a Kid friendly meal plan and a recipe.  Enjoy!

It is time to head back to school… already!  I have enjoyed our summer (I actually LOVE summer break because I love doing fun activities with the kids at home), but I’m excited for our kids to start whole new year with new adventures in learning!  I was a teacher, so I am just as excited for their first day as I used to be for mine.   I loved meeting my new students and I loved teaching each and every one of them!

Whether your child is 4 or 14, adjusting to school is never easy- I have seen it with our kids.  They are tired and worn out after the first week.  They are adjusting to new schedules and new friends and new teacher.  It is hard (fun, but hard) for them.  It is equally hard (and fun) for us… the parents!   Back to school lunches need to be packed, new schedules need to be made and just an all-around change happens in our home.  I honestly rely heavily on  eMeals!

Turkey-Bacon Tortilla Roll-Ups:

Prep Time: 10 mins

Cook Time: 5 mins

Total: 15 mins

Ingredients: 

8 slices bacon

Mayonnaise

1 (8-oz) package store-bought guacamole

4 (8-inch) flour tortillas

1/4 lb thinly sliced deli turkey

1 cup shredded Cheddar cheese (or any shredded cheese)

1 cup shredded iceberg lettuce (optional)

Instructions: 

1- Cook bacon in a large skillet over medium

heat until crisp; drain.

2- Spread a thin layer of

mayonnaise and guacamole over each tortilla.

3- Layer turkey, bacon and cheese on each

tortilla.

4- Add lettuce, if desired.

5- Roll up tortillas,  and cut in half.

Makes 4 servings.
