This hamburger helper lasagna with zucchini recipe is so quick and easy (and the kids love it!) I’m sharing it today, because right now you can get free ground beef when you buy three Hamburger (or chicken or turkey) helpers. I wanted to show you our favorite way to spice things up! I love to have Hamburger Helper close by because it is quick, easy (and right now, with the free ground beef rebate, you can get dinner on the table for your family for around $2.
1 lb ground beef
1 box Hamburger Helper™
2 cups water
1 medium red bell pepper, chopped (1 cup)
2 small sliced zucchinis
1 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Directions:
Heat oven to 375°F.
In 10-inch skillet, heat the ground beef and cook for around 5-8 minutes over med-high heat. Drain well when the beef is cooked through and no longer pink.
Take a small bowl and combine the cheeses: ricotta, parmesan and mozzarella. Set aside.
Take an ungreased 11X7 in. dish and stir sauce mix (from Hamburger Helper box) and water until blended. Microwave this for 90 seconds. Remove from microwave and add pasta from Hamburger Helper box. Add the pepper, zucchini and ground beef.
Take your cheese mixture and spoon, evenly, over the Hamburger Helper mixture. Bake it, uncovered, for 45 minutes. (You want the sauce to be bubbly).
