This is just about the easiest healthy pancake recipe that you will find!

Serves 8 (If you have leftovers, you can put them in the refrigerator or in the freezer & heat as needed. I put them in ‘serving sizes’ in plastic baggies in the freezer & they are ready for each person whenever they want one for breakfast during the week. Or cut this recipe in half for 4 of you).

1 cup whole-wheat flour

1 cup quick cooking oats

2 tablespoons white sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

2 Tablespoons wheat germ (optional)

1 teaspoon nutmeg (I add this because I love the flavor that it gives the pancakes, but its optional)

1-1/2 cups buttermilk (I often just use regular milk)

2 teaspoons vanilla extract

1/4 cup vegetable oil

2 eggs

HOW TO MAKE IT:
Place flour, oats, sugar, wheat germ, baking powder, baking soda, salt, buttermilk, vanilla, oil and egg in a food processor or blender and puree until smooth. Now you can make it even tastier with a handful of chocolate chips!  (add the chocolate chips AFTER you have blended the rest, or else it just makes chocolate batter)

Heat a lightly oiled or buttered griddle or frying pan over medium high heat. Pour the batter onto the griddle or pan. Brown on both sides (flip when it starts to bubble).
