I am always on the hunt for an easy, kid-friendly recipe!   These easy cheesy chicken nuggets are a big hit in our house. I think I like them more than our kids.  (No exaggeration there!  They are great!)

Ingredients:
1 box cheese-it crackers
4 Chicken Breasts

Directions:
Cut up about 2-4 chicken breasts (depending on how many people you will be serving) into bite size pieces & set to the side.

In a ziplock baggie, crush up about 1/2 of a box of cheeze-it crackers (I used a rolling pin, after letting the air out of the baggie)

Dip the raw chicken bites into oil (I use olive or canola)

Take the chicken out of the oil & put them into the crushed up cheeze-its.

Coat the oiled chicken bites with the cheese-it crackers or any type of cheese cracker- they make several organic kinds if you would rather that (I just left them in the bag & threw the chicken in and shook it & repeated this until I used all of the chicken.)

Sprinkle the remaining crushed up cheeze-its on the cookie sheet.

Bake at 350 degrees for about 30 minutes.

Sprinkle with salt when they come out of the oven, if desired.

  1. Hmmm…those sound interesting. I have one child who likes Cheez-its and one who does not so I am not sure how much the recipe would go over here. I am always looking to add a little variety though and do usually have a box of those crackers in our pantry.

    1. To be honest, they don’t even taste cheesy, just good! 🙂
