Oh, yes… we have been able to add cheese & butter to our favorite vegetable!  I’ve been making this casserole for as long as I’ve been cooking, and it just gets better with time.

It’s so easy, delicious and our kids LOVE it!   I’d call that a win-win-win!   Plus, it is a great side dish to any of your favorite recipes!

I’ve served this with grilled chicken, ham or just as-is.  It’s easy for a busy night because it is so easy/quick to prep.

When I know that the kids have sports practice or homework that needs to be done, I’ll prepare it ahead of time and put it in the oven while we are working on schoolwork, so it is ready when we are.

It is a really great back to school meal that the kids, Mickey & I all love.

Ingredients:

  • 3 pkg. (10 oz. each) frozen chopped broccoli, thawed, drained
  • 3/4 lb. (12 oz.) American Cheese (I’ve used cheddar cheese in the past, as well.  Both are great!)
  • 30 Crackers, coarsely crushed (about 1-1/2 cups), divided
  • 1/4 cup (1/2 stick)  Unsalted Butter, melted

Directions:

  1. Heat oven to 350°F.
  2. In a large bowl: Mix broccoli, Deli American and half the cracker crumbs until well blended.
  3. Dump this mixture into a 2-qt. baking dish.
  4. In a separate bowl, mix remaining cracker crumbs with the melted butter.
  5. Pour over the entire broccoli mixture.
  6. Bake at 350 degrees for 30 minutes, covered with foil.
  7. Remove foil and bake 30 more minutes or until heated through.

This recipe is so yummy! Your family will be asking for it every few days… and just watch out, because your kids will ask for it, too!  You might want to give it a name other than Broccoli Casserole if your kids aren’t fans of broccoli. 😉

Our kids really like this side dish, so hopefully, yours will, too! 

If we have leftovers, I will either dice up chicken and add it to the dish for the following nice, or I will freeze it (with the chicken incorporated.)    You can also some diced ham.

Either way, it’s a great meal that everyone asks for over & over again.

Cheesy Vegetable Casserole

This is an amazingly warm, cheesy side dish with a buttery, crunchy topping.

Ingredients 

  • 3 pkg. 10 oz. each frozen chopped broccoli, thawed, drained
